Ice Fishing 2010

Our ice fishing adventure this year included our inseparable group. We went up to Panquitch Lake on Saturday morning. We didn't catch much other than Robin and C.J.'s wiener fish they caught right before we left. It was a pretty warm day although it was cloudy but we had a blast and that is all that matters. Here are some of our pictures from our ice fishing/sledding day.

Dinner Dates With Friends

Our group of inseparable friends (Harwards, Fergusons, and Clements) decided it would be fun to have Dinner Dates each week. One of the couples (usually just the wife) makes dinner for the rest of us. We started this about a month ago. So far it's been really fun and a great way to collect and taste new recipes that we have found and that our families make. The idea is to prepare simple, inexpensive meals that taste great and are quick and easy. We have had some amazing dinners and thanks to Jess and Robin for the dinners they have made. Here are a few of the recipes I have shared and collected so far from these Dinner Dates.

Last night I made Skillet Lasagna with Garlic Bread. I got this recipe from our apartment complex's newsletter while we were in Texas and have wanted to make it ever since I saw it.

SKILLET LASAGNA (Clement)


~1(24-26 oz) Jar Marinara Sauce
~3 Cups Water~8oz Lasagna Noodles
~1 Pound Turkey Sausage (I used just ground beef)
~2 Garlic Cloves; pressed
~2 Tbsp Fresh Parsley; chopped
~2oz Parmesan Cheese
~1 Cup Whole-Milk Ricotta Cheese; drained
~1/2 Cup Shredded Mozzarella Cheese
~1/4 tsp Coarsely Ground Black Pepper

Combine sauce and water in skillet. Cover; bring to a boil. Break noodles into quarters and stir into sauce. Cover; simmer until noodles are tender, stirring occasionally. Meanwhile, crumble and cook sausage in another skillet, stirring, often, over medium-high heat until sausage is no longer pink. Add garlic; cook 1 minute. Add to noodles and sauce. Next, set aside 1 Tbsp parsley for garnish. Combine cheeses, remaining parsley and black pepper in bowl. Scoop spoonfuls of cheese mixture on top of noodles. Cover and simmer until cheese is melted and heated through. To serve, sprinkle with reserved parmesan.

HAWAI'IAN HAYSTACKS (Clement)

I guesstimate on the amounts depending on how hungry I am and who I am feeding.

~Boneless Skinless Chicken Breasts; cubed
~Cream of Chicken
~Sticky Rice
~Pineapple Chunks; drained
~Chow Mein Noodles
~Water or Milk
~Cheese

Cook rice. Warm Cream of Chicken with about 1/2 can of water or milk per can of soup (add more water or milk if you like the sauce runny). Cook chicken and season as desired. I usually warm my pineapple with my chicken after its cooked. When everything is cooked I just layer my haystack however I want. {Rice, Chicken and Pineapple, Cheese, Sauce, and then noodles.}

MY MOM'S SIMPLE HAWAI'IAN CHILI (Clement)
(a Felsted Family ice fishing tradition)


~Cans of Chili
~Pineapple; drained
~Cheese
~Fritos
~Sausage (optional)

Warm together. Pile on top of Fritos. Enjoy!!!

WHITE BEAN AND CHICKEN CHILI (Harward)


~3 Cans (15oz) White Beans; drained
~6 Cups Chicken Broth
~2 tsp Cumin
~2 Medium Onions; chopped
~2 Garlic Cloves
~2 tsp Olive Oil
~11/2 tsp Oregano
~11/2 lbs Chicken
~1/4 tsp Red Pepper Flakes
~2 Cans Green Chiles
~Salt & Pepper
~Tortilla Chips
~Sour Cream
~Cheese

Boil beans, chicken broth and 1/2 of onions. Reduce heat and simmer. Saute' onions in oil and add chicken and rest of ingredients. Transfer to large pot and return to boil reduce heat and simmer for an hour. Garnish with sour cream, tortilla chips and cheese.

ARTICHOKE DIP (Harward)


~1 (8oz) Package Cream Cheese
~1 Can Olives; diced
~1 Can Green Chiles; drained and diced
~1/4 Cup Parmesan Cheese
~1/4 Cup Sour Cream
~1 Can Artichoke Hearts; cut and drained
~Garlic Salt and Pepper to taste
~Something To Serve With {crackers or veggies}

Mix well put parmesan cheese on top. Bake until cheese is melted if you like it warmed. Serve with crackers or veggies.

JESSICA'S GRANDMA'S SPAGHETTI SAUCE (Harward)


~Hamburger
~1 Tbsp Olive Oil
~ 1 (15oz) Can Diced Tomatoes
~1 (15oz) Can Tomato Sauce
~Onion Soup Mix
~1/4 tsp Sugar
~Cream of Mushroom Soup
~Pasta

Compine in sauce pan. Serve over pasta.

ECLAIR CAKE (Clement)


Crust
~1/2 cup Butter
~1 Cup Flour
~4 Eggs
~1 Cup Water
~1/4 tsp Salt

Filling
~1 (8oz) Package Cream Cheese
~2 Small Vanilla Pudding Packages
~3 Cups Milk

Topping
~Cool Whip
~Chocolate Syrup

Crust: Bring butter and water to boil. Add flour and salt mix well until forms a soft ball. Let the ball cool slightly. Add the 4 eggs to the ball. One at a time!!!! Spread over large greased cookie sheet. Bake at 400 for 25-30 Minutes. Let cool.

Topping: Soften cream cheese mix with pudding and milk spread on cooled crust. Spread cool whip on top of cream cheese-pudding mix. Drizzle on chocolate syrup. Refrigerate.

GRILLED PIZZA (Clement)


~Jiffy Pizza Dough Mix (Follow Directions On Box)
~Desired Toppings {Ham, Pineapple, Pepperoni, Tomatos, etc.}
~Cheese
~Pizza Sauce

Make dough as directed on box. Place dough on greased tinfoil on BBQ. Cook one side of dough then flip and dress pizza on cooked side of dough. Allow other side to cook as cheese melts.

FRUIT PIZZA (Ferguson)


~Pillsbury Sugar Cookie Dough
~1 (4oz) Lemon Yogurt
~Cool Whip
~Fruit Variety {Banana, Kiwi, Strawberry, Pineapple, etc.}

Bake flattened cookie on greased cookie sheet at 350 until center is done. Fold Cool Whip and yogurt together then spread on cooled cookie. Layer on fruit until pretty.

CHICKEN ALFREDO FETTUNINI (Ferguson)


~1 Cube of Butter
~Mushrooms
~Onions
~Boneless Skinless Chicken
~1 Pint Heavy Whipping Cream
~1/2 Cup Parmesan Cheese
~Garlic Salt & Pepper
~Pasta

Saute mushrooms, onions and seasoned chicken in one cube of butter. Combine remaining butter from saute with the heavy whipping cream, parmesan cheese, garlic salt and pepper. Cook pasta. Serve with salad and garlic bread.

CHICKEN CORN CHOWDER (Ferguson)


~1 Can Cream of Chicken
~1 Can Cream of Potato
~1 (4oz) Can Green Chiles
~1 Package of Taco Seasoning
~3-4 Boneless Skinless Chicken Breasts
~3 Cups Chicken Broth (you can take this from the water you boil the chicken in)
~8oz Velveeta
~Tortilla Chips
~Sour Cream
~Cheese
~Can of Corn; drained

Boil the chicken breasts, keep the water. In pot or crock pot combine Cream of Chicken, Cream of Potato, chiles, taco seasoning, corn and three cups of chicken broth (or the water you boiled the chicken in) heat up. Cut up 8oz of velveeta into small cubes and put in crock pot. DO NOT BOIL cheese burns easily. Stir constantly until cheese melts. Cut chicken in to cubes and put into soup. Serve with chips, sour cream and cheese.

CORN CASSEROLE (Ferguson)


~1 Can of Corn
~1 Can of Creamed Corn
~1 Cube of Butter; melted
~1 Cup Sugar
~1 Box of Jiffy Corn Muffin Mix
~2 Eggs
~Dash of Vanilla
~8oz Sour Cream
~1 Tbsp Baking Power

In a bowl combine everything. Pour in 9x13 greased pan and bake for an hour at 350.

Mission Anniversary & *Let's Make A Deal*

January 10th marked the 5th anniversary of Brian being home from his mission. He was so excited about it, We decided to have the family over to enjoy Tacos and Toronja. Mom was sick so Griz had to take some tacos home.

This is my first post ever...I figured I should write a little something since it's been 5 years since I have been home. I left on my mission from California and came home to a new home in Arizona. A little tough adjustment but I love it now and look forward to living in the hot sun soon...
Here is me, coming off the plane and seeing the family for the first time in 2 years. It was a special moment for all of us. It's amazing how much changes in 5 years, I remember being at Lake Powell with the family and Pops said a lot will change in the next five years of your life. It surely has and it's been an extremely challenging and rewarding five years.
The family all together again, except Dan...he was stuck in Utah. We have all grown up and a lot has changed since Jan. 2005, Jamie & Dan have two boys and live in Arizona while Katie is in Provo, Utah going to Paul Mitchell School. Mom and Pops are the glue that holds this family together. As for me, I am so lucky to have met my eternal companion here in St. George. She is perfect for me, and I love her so much. We all continue to look forward to the future memories.

On Jan. 16th we went to the game show Let's Make A Deal in Las Vegas. Aaron found the tickets on line for free so we thought it would make a fun weekend. The audience is supposed to dress up in costumes. The most creative and homemade costumes usually catch Wayne's eye. After thinking of about 6 ideas our friend C.J. came up with the idea of being pinatas. Brian and C.J. went to the 3 Amigos Market and found these almost life size pinatas to use.


We then brought them home to C.J. and Robin's house and cut them down to fit their bodies. Aaron got the Diego pinata, Brian the big Snowman and C.J. got some purple pig/donkey/monster thing.


We also invited Ian and Alyssa to come with us. They dressed as the cutest nerds ever.



The day was long but so much fun. We got to the Tropicana about 8 o'clock and stood there for about an hour waiting for the line to open. They hand you your contestant number and papers to sign and fill out while you wait for a little longer to get your picture taken. Then, we went into the interview room and answered like 3 questions then we were off to the stage. Robin and C.J. were the first contestants to be picked for their deal. We aren't supposed to give away the details until the episode airs. But, we will keep you posted on when our air date is as soon as we know. It looks like we are getting close to air though!!!!

December-January Review


December 8th marked Brian's 26th Birthday.
Our good friends Robin and C.J. came over caroling Happy Birthday at the door with a plate of Brian's favorite funfetti cupcakes with rainbow chip frosting {large size} complete with lit candles and all!!! Thanks C.J. for making us all wish we can sing in acapella!!!

Christmas seemed came fast this year. We wanted to spend Christmas this year with my family but some things came up so we decided to head to Arizona early and surprise the Clement family. We headed down the 24th as soon as I got off work. The weather was perfect the whole time we were there.


Christmas morning Brian, Katie and I were awakened to the THUMP of
*NSYNC's Merry Christmas, Happy Holidays against the walls.

We pulled ourselves out of bed to head to the living room to see what Santa had brought.

Of all the surprises from Christmas, I got the best ones this year. Brian spoiled me with the new iPod touch, that I love so much {and drive him crazy with. Sorry babe, its the new boyfriend}. And then, I got the Paul Mitchell straightener THE SILVER ONE that I have dreamed about getting since I started working at Paul Mitchell.
It's amazing it takes half the time to do my hair.
And yes, you probably won't believe it but I cried over the silver straightener... AND got the family crying with me over a stinking straightener. Gotta love it!!!

For Brian's Christmas present to each other, we decided to get tickets to the Arizona Cardinals game on the 27th against the Rams. Since it was both of our very first NFL games. I'm not a big fan of watching football on TV, I can't seem to stay awake during the 4 minute intermissions between the 40 second plays for some reason. But being there live was a whole other experience.


The home games are in the University of Phoenix Stadium in Glendale. We were so lucky to get our tickets from eBay for a great price. We were 8 rows up from the End Zone.

We were able to get there pretty early and got to walk around and see all the Tailgaters and see how sweet they are and how excited they get about their teams. Some even so proud of their teams they were wearing Steelers, Colts and Chargers jerseys to a Cardinal and Rams games. Go Patriots. HAHA, JK.


My husband is so cute and loves to paint his face. He was one in probably 15 in the whole stadium to paint their face. He did it all himself, too. So proud of my little makeup artist.


We were so close we got to see actually how big Larry Fitzgerald's butt really is. As hard as we tried we couldn't quite get Big Red to come take a photo with us *Bummer* maybe next time.


The stadium is beautiful and so nice.
Unbelievable how much money professional sports pour into their facilities.
Thanks babe that was so much fun can't wait to be a full season ticket holder.
Haha, maybe if get rich {we'll keep praying}.


On the 29th we all went to hit up the Ice Skating Rink just like we did last year.
But, this year was a bit more fun.


After I learned to get the hang of it again we played a little tag.


After getting tagged by who was "it" while you were the one who was actually "it" the game ended and transformed into the "Hold On As Tight As You Can While We Fling The One On The End As Fast As We Can To See How Many People We Can Take-Out" game.
And then the usual ChaCha Train.


Until of coarse half of the family takes a big spill then the red jackets come out and tell you "You can't do that".

30th~We went to Flagstaff with the boys, Jamie and Dan to see the
snow and take a break from the heat.
Heehee.
And of coarse to go tobogganing.
I LOVE TOBOGGANING!!!


It was all fun and games until "Uncle Brian had a bad, bad, bad idea" Taylor says about our idea to make a train with 5 of us. We had Taylor in the front Katie behind him, then me, Brian and Dan in the back. We flew down the hill while getting pelted with ice on our way down as we turned sideways and tumbled down the last quarter of the mound. It was a blast though picking out the snow from our undies.


The 31st and the 1st we took out the dirt bikes and four wheelers for a spin. Well, Pops is the only one with the spin and spill the rest of us just took the toys out for a ride.


We love riding out in the desert down there with the saguaro cacti everywhere.
It's a whole other world.

After taking a quick break for time to strike 12 o'clock to ring in the New Year and take a picture. We continued to enjoy the gift from Pops of the D.V.D.s of the
12 Years of Christmas' Past.
It was so much fun getting to look back at how cute Brian and his sisters were when they were little.
Pops, that was an amazing gift I don't think all of us kids could thank you for all the work and effort you put into that special surprise.

For Brian's and my 2nd Anniversary on the 5th we went to Cave Creek to walk around and see the old town that C.J. loved telling us about. For lunch at a really yummy Mexican restaurant that had turtles, ducks, and geese right at our feet.


We walked around at Buffalo Bill's and The Town Dump for a bit until we found these amazing little boards. We had to take a few breaks for the Kodak Moments.


And NO our schnozes are not as large as our shadows portray.


I hate snakes but I thought I would hold one just this once for this one Kodak Moment.


How can he see to round up anyone in this town with those squinty eyes?


Welcome to Malfunction Junction.


That night when we got home we sat down with the family to watch My Sister's Keeper. This was my "Bad, bad, bad idea." The whole family were big snot balls.
It was a great movie although I do not recommend it unless it's that time of the month and you want a good cry that will leave you with puffy eyes that you can't open in the morning.


But, before the movie Brian set up this cute picnic table with Sierra Mist and candles out in the desert surrounded with saguaros.


We toasted our soda over new promises and goals we made for us to work on to help bond us even stronger.


I love you, My Sweety. I love absolutely everything about you. I am so lucky to be the one that gets to hold you in my heart for eternity. To be the one to hold your wrinkly old hand in 50 years. To be the one to love you with as much love I can muster up. To be the one to roll you over when you snore. To be the one to yell at your refs. To be the one to support you in all your sports and school. But, most of all I love being the one to be yours.

Cold Visit With Katie

This weekend was a lot of fun. Brian and I went to Salt Lake City for my friend Guyla's baby shower. I haven't seen her in about 2 years. It was good to see her and her cute baby bump.

We picked Katie up from school as a surprise right before she was done for the day. She was so excited. Brian and her hung out and had some big brother-little sister time and got some dinner while I was at the shower. After they came and picked me up we all bundled up and headed to the Salt Lake Temple to walk around, freeze our toes off and see the beautiful Christmas lights.

It was so fun to see Katie, meet her roommates and see her school. Katie has grown up so much since she has been on her own.



We love you Katie and miss you already we can't wait to see you and the family for Christmas!!! Have fun with the girls and your dates, stay warm and call us whenever you need anything no matter what time of day.(Brian is always up between 11:30am and 3 am. :)

A Few Things We Missed

I haven't blogged for a bit but, here are some recent happenings.

Brian and Mom's buck was shot right in the morning as early as it is legal to. It was a nice 3X3 we are sure proud of our meat storage for this year!!!



Our little scare alley we put on in our garage and backyard was a lot of fun and I think the little kids enjoyed it quite a lot.




The other night Brian and I decided to take the Kia out and go for a little sleep over in the back of it. We thought we were going to freeze so we brought a load of blamis but we actually stayed pretty warm. We brought the portable DVD player and laid down and snuggled in the back while we watched a movie till we fell asleep.
